The RROC grows both pacific rock (crassostrea gigas) and native (ostrea eduile) oysters. These are all harvested by hand from our nutrient rich waters. After harvesting, our market size oysters are washed and then put into a purification tank for a minimum of 42 hours. The purification tanks utilise UV lights to purge bacteria and impurities from the shellfish. Our modern tanks are fully passed by the Environmental Health Officer as well as CEFAS (a government organisation) in addition to the tests carried out by officials we regualarly test our end products to ensue a constant, high grade, quality oyster.
Due to spawning periods native oysters are only available from September until April, but don't worry, our great pacific rock oysters are available all year round!
Oysters, are they good for us? At only 75 calories per dozen oysters the answer is clearly yes! They contain an array of vitamins as well as omega 3 and are good for people with high blood pressure and/or cholesterol levels. Eating about 25 oysters a week John (previously 18, now 10 stone) swears by them!
Our oysters are best eaten as they are, maybe with a squeeze of lemon. However they are also great cooked, simply open and retain in the half shell, add white wine, garlic and cheese and grill until the cheese has melted, serve immediately. (Be careful the shells get HOT). At our farmers markets (see bellow) we serve a shallot vinegar which is very popular as it adds that bit of crunch!
